Bikini Recipe
Makes enough for 10 people
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Citrus Syrup: Combine all the items into a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Then, remove from the stove allowing it to cool entirely. Transfer to a sealable bottle, close it keeping it in the fridge, it can be stored for about four weeks.
For the Cocktail Base: Combine the specified spirits and syrup into one large bottle, leave to sit for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the cocktail base into a cocktail shaker filled with ice, gently stirring lightly for one minute to chill. Strain into a chilled martini glass or equivalent, garnish with some cranberries and finish with a quick spritz of mandarin oil above the glass.
