Holiday Finger Food: Ways to Use Christmas Remains into NYE Canapes
What kinds of canapes can I prepare for New Year’s Eve using my Christmas remaining food that will still impress guests?
Party snacks needn't be fancy, so New Year's presents a great opportunity to clear the decks. The main guideline is to stick to items to just one bite—no one wants to handle a fork. People just want a big hug of comfort food with a decadent twist.
If you have a bit of cured fish left, layer it on mini pancakes and crown it with affordable roe. Mini fishcakes are also an ideal choice: If you have remaining fish or flaked salmon, fold it through creamy potatoes, combine with fresh herbs, citrus, and fried leeks, then roll in panko and fry until golden.
You could also get creative with Spanish croquettes. Prepare the white sauce up to days ahead, then use remaining pork, poultry, or foraged fungi for the interior. Blitz old bread into breadcrumbs to coat them, then cook until crisp. Sausage roll fillings are another natural home for those breadcrumbs, or use them as a coating for bite-sized chicken. For flavour, just add a bit of citrus zest and aromatic herbs, and they'll taste so much more. Incidentally, croissants make excellent coatings, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Get some holiday meats in an sealed tub and freeze. While you're at it, set aside some berry relish and sweet glaze in the fridge. When needed, defrost the meat, then place it in a preheated oven with the saved glaze for a short time. Let it cool and cut into thin pieces, then arrange on top of some sourdough and assemble sandwiches with lots of tangy sauce. Cut into small squares for a surefire hit.
Leftover turkey, meanwhile, could be transformed into a zingy salad. You often have a bit of turkey leg left over, and it's ideal for something punchy. Pull the meat, then crisp it slowly in a pan, and toss with leftover cranberry sauce thinned with lime juice, a spoonful of soy sauce and a little chilli oil. Finish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Mix all your leftover veg with fresh herbs, then add salt and pepper and incorporate flour. Cut out portions to roughly the size of small rounds, then keep in the icebox. Refresh in a preheated oven for a short time and top with whatever you like—perhaps roast beef and grated horseradish. A good tip, though: save a stash for brunch the next day.
